Pengertian Procedure Text merupakan genre dari sebuah tulisan yang menerangkan bagaimana cara membuat sesuatu / cara melaksanakan sesuatu dengan berurutan. Tujuan dari Procedure Text ialah memberikan petunjuk mengenai cara melaksanakan sesuatu melewati tindakan-tindakan yang runtut.

Generic Structure

Tiga jenis Procedure Text yang yang tidak mengenakan materials / alat – alat, yakni :

• Text yang menjelaskan bagaimana melaksanakan sebuah intruksi secara manual / bagaimana sesuatu bisa bekerja.
• Procedure Text yang menjelaskan atau menerangkan peraturan dari bagaimana melaksanakan kegiatan-kegiatan tertentu.
• Text yang mengajarkan manusia mengenai kehidupan / yang berhubungan dengan sifat dan juga kebiasaan manusia.

Steps Bagian ini berisikan serangkaian langkah – langkah yang harus dilaksanakan dengan secara berurutan. Steps ini harus dilaksanakan supaya tujuan yang di utarakan pada bagian Aim / Goal bisa tercapai.

Ciri – Ciri

• Mengenakan pola kalimat Imperative. Misalnya “Don’t mix the coconut milk with water” , “Cut the banana into pieces” , “Heat the water for 5 minutes”, dan yang lain sebagainya.
• Memakai action verbs, contohnya crack, chop, cut, heat, mix, dan lain seterusnya.
• Menggunakan sequence adverbs seperti first, next, second, then, while, finally.
• Mengenakan kata keterangan buat menyatakan rinci waktu, dan juga tempat contohnya for “boil the water for 15 minutes” , “Cook the mixture for one hours”, “Crack the egg into the bowl” , dan juga lain sebagainya. memakai simple present tense.

France, known as the homeland of many chefs, where classical cuisine was born, the foundations of many techniques were laid and the source of gastronomy and food culture spread to the society in various ways, is shown among the deep-rooted cuisines in the world. This study aimed to briefly summarize the history and spread of potatoes across the continents, and the France, and the cooking techniques of potatoes in classical French cuisine is emphasized. As a prominent feature, it is stated that the starch ratio differs considerably in the structure of the potato and the resulting dishes. Fianna potatoes, known with high starch content and as floury, are used for the dishes that baked on a mash basis whereas Elodie potatoes, known with low starch content and as waxy were used for boiled and sauteed dishes. Acetes is a small sized shrimp, locally known as ‘Jawala’ or ‘Kolim’ is landed along the north-west coast in the states of Gujarat and Maharashtra, India. At present the fresh utilization of Acetes is very limited. One of the most important food product is battered and bearded product. A standardized recipe of batter and breaded Acetes product is mentioned in the paper. Acetes cutlet having a standard size of 2.0-3.5 cm in length cm diameter, 1 cm thickness and 0.2-0.5 g weight Acetes cutlets were standardized by using different ingredients viz., cooked potatoes, salt, green chilly (C) and ginger (G). Prepared of cutlets were standardized by organoleptic evaluation. It was found that, Acetes cutlet prepared with the ratio of 75:100 (w/w), 20:100 (w/w), 5.5:100 (w/w), 5.5:100 (w/w) and 2.5:100 (w/w) for potato: Acetes mince, onion: Acetes mince, green chilly: Acetes mince, ginger: Acetes mince and table salt: Acetes mince respectively, ratios showed highest score as compared to other ratios tried in the experiments.
